1 tbsp | Coconut butter (manna, processed whole coconut) |
1/4 cup | Extra virgin olive oil |
1/2 cup | Water, filtered |
1 whole lime(s) | Lime juice (fresh) |
1 tsp | Apple cider vinegar |
1 clove(s) | Garlic |
1/2 tsp | Sea Salt |
1 tbsp | Cilantro (coriander) |
Place all ingredients except the cilantro in a blender and mix until thoroughly combined. If the dressing is too thick think with water until the desired consistency is reached.
Add the cilantro and blend for 10 seconds or more until just combined.
Coconut butter, aka coconut manna, is solid at room temperature. You may need to soften in a warm water bath prior to using.
