1 1/3 kg | Butternut squash (peeled, seeded, cut into 1-inch cubes) |
1/4 tsp | Cinnamon |
2 tbsp | Coconut oil (melted) |
1 dash | Ginger, ground |
1/4 tsp | Sea Salt |
1. Preheat oven to 400oF (200oC).
2. Place butternut squash in a large bowl and combine with the coconut oil, cinnamon, ginger, and sea salt, stirring to coat evenly.
3. Place in a baking dish and cook for 1 hour, or until completely tender, making sure to stir every 20 minutes or so.
