Chop walnuts up in a blender until ground coarsely. Add in the dates and pulse until it is incorporated. Then add in maple syrup, honey, almond & cashew butter, vanilla and salt. Blend until the mixture is thick and smooth. Add almonds and pulse a few times until combined, you want the almonds to be chunky. Grab a tablespoon worth of the mixture and roll into balls, roll on top of shredded coconut and let cool in fridge until firm.
