Coconut Brown Rice and Quinoa

This slightly sweet coconut brown rice/quinoa combo is perfect as a side to any vegetable or chicken dish!

Ingredients


1 cup Brown rice, long-grain, dry (rinsed)
1 cup Quinoa, uncooked (rinsed)
3 cup Water
1 can(s) (13.5 oz) Coconut milk, sweetened (unsweetened)
1 tsp Cane sugar
1 dash Vinegar, white (keeps rice from sticking together)

Instructions


1) Add the rice and quinoa to a rice cooker or medium saucepan.

2) Add the water, coconut milk, sugar, and vinegar to the rice and quinoa. 

3) Bring to a boil, cover, and lower the heat to a simmer. Cook until the liquid is gone.

4) Fluff with a fork. Enjoy!
