Delicious, 9-ingredient snack bites with coconut, tahini, cacao, and plenty of satisfying add-ins. High in healthy fats and protein!
Ingredients
1 1/2 cup
Coconut, shredded, unsweetened
1 1/2 cup
Almond flour/meal, Bob's Red Mill
(or use seed meal; such as sunflower; hemp)
2 tbsp
Flaxseed meal (ground)
3 tbsp hulled
Hemp seeds, shelled
2 tbsp
Pea Protein Powder
(or vegan protein powder; plain, vanilla or chocolate)
1/3 cup
Tahini
5 tbsp
Coconut butter
1/4 cup
Cacao nibs, raw
1 pinch
Sea Salt
1/4 tsp
Cinnamon
(ground)
Instructions
Add all of the ingredients to a food processor and blend/ pulse on high until large ball forms. This takes about 5 minutes. Scrape down sides as needed.
If the mixture is too thick, add more coconut butter or tahini. If the mixture is too thin, add more almond flour or shredded coconut. It should be thick and scoopable.
Scoop out 2 tbsp amounts, form into a ball, and arrange on a parchment-lined baking sheet. You should have about 20 bites.
Set in freezer or refrigerator to firm up. Once firm to the touch, they're ready to enjoy. For best results, store in the freezer for up to 1 month or refrigerator for up to 1 week. If storing in the freezer, let thaw 5-10 minutes for best texture.
Notes:
No Protein Powder
Leave out protein powder if you don't have any.
Use whey (if not vegan), collagen, or other plant-based protein powder.
