Ingredients

Cauliflower
|
2 tbsp

Coconut oil
|
3 tbsp

Coconut, shredded, unsweetened
(or flakes)

Instructions
- Place cauliflower into a large food processor and process until the size of rice.
- Heat coconut oil in a pan over medium-high heat, add cauliflower and shredded coconut, and cook until lightly brown, about 2 or 3 minutes.
- Reduce the heat to medium, cover, add salt, and cook until cauliflower is tender, a few more minutes.
- You may also brown and cook in the oven, if you prefer a crunchier “rice”.
