High in antioxidants and "healthy" fats! A great snack!
Ingredients
2 cup
Coconut, shredded, unsweetened
1/4 cup
Coconut oil
1/2 cup
Whey protein powder, vanilla
1/2 cup
Dried goji berries
2 tbsp
Maple syrup
1 tsp
Vanilla extract, pure
Instructions
In a food processor, pulse the coconut flakes for 3-5 minutes until it reaches a thick, paste-like texture.
Scrape the sides of the bowl to ensure it is thoroughly combined. Add the coconut oil, protein powder, goji berries, maple syrup and vanilla to the food processor and pulse again until combined.
Using a rounded tablespoon, roll the “dough” into balls, pressing the mixture firmly so the balls are well-formed.
Place the balls in an air-tight container and refrigerate.
