2 cup packed | Coconut meat (frozen - feeding change or exotic superfoods available at Joannes in Peterborough or big carrot in Toronto) |
1/2 cup | Coconut water, unsweetened, ready-to-drink (or filtered water) |
1 capsule | Probiotic capsule |
1 tbsp | Honey, raw |
1/2 tbsp (level) | Psyllium seed husk (ground or marshmallow root) |
1 tbsp | Goji berry powder (i used macqui berry powder) |
2 scoop | Protein Powder, Bulletproof Collagen (or other preferred plant based protein) |
Blend coconut meat and coconut water until combined. Add probiotic capsule and honey. Blend until very smooth. You may need to use spatula to scrape sides of blender in order to incorporate all.
Put mix into a 1 litre sized mason jar and fasten mesh or nut bag over top with elastic band. Leave in warm area of home for at least 24 hrs to ferment. May need longer to ferment depending on temperature in home.
Ferment is done when the mix has risen and you can see bubbles.
Put mix back into blender and add ground psyllium seed husk and macqui berry powder and blend until smooth. Taste and adjust sweetness if necessary.
Store in mason jar or other glass container in fridge and use as desired for breakfast yogurt or other. Serve in 1/2 cup portions. Mix in collagen protein or other protein choice and add optional toppings such as cacao nibs, berries, coconut chips, nuts, seeds, hemp, goji berries, fresh mint leaves etc...
Will keep in fridge for approximately 4 days.
