This Coconut yoghurt is incredibly rich and creamy and is FULL of probiotics which keep your digestive tract happy and healthy.
Ingredients
1 can(s) (13.5 oz)

Coconut milk, sweetened
|
1 tbsp

Tapioca starch
|
2 capsule
|
Probiotic capsule

Instructions
- Heat the coconut milk so that the mix is not lumpy
- Put the tapioca starch into a small bowl and add a couple of tablespoons of coconut milk to make a liquid paste
- Allow the milk to cool a bit and keep on a low-medium heat so that it will not cook the tapioca as you add it in
- Add the tapioca to the coconut milk gradually whilst stirring continually (be careful not to add all at once).
- Continue to stir for a 5-10minutes, until there are no lumps (you can use a whisk/ turn the heat down if necessary). Leave to cool
- Once cool add two probiotics (remove from capsule), or your coconut mother
- Leave overnight for approx 12-16hrs (with the lid on) at room temperature or leave in an oven at a low temperature
- Add a sweetener of your choice, in the amount of your choice
- If the yoghurt is lumpy the following day you can whisk it smooth
