681 gm Beef, ground, extra lean
1 pinch Sea Salt (to taste)
1 dash Black pepper (to taste)
1 cup White onion (chopped)
1/2 cup diced Celery (chopped)
1 cup chopped Carrots (chopped)
3 clove(s) Garlic (3 or more, your preference)
6 cup Beef broth (stock), low-sodium
1 cup Water
2 leaf Bay leaf
1 tsp, leaves Thyme, dried (If fresh add toward the end of cooking)
1 tsp Onion powder
2/3 cup Pearl barley, dry (rinsed)

Instructions


  1. Brown ground beef in pan, cooking well until almost no pink shows. 
  2. Place in a slow cooker, and add in onions, carrots, celery, and garlic, along with salt and pepper, and dried thyme. If you are using boxed beef stock, or cubes, you may want to omit the salt.
  3. Let cook on low setting for 2 hours, or until bubbling. 
  4. Add in one cubed potato. Let cook until potato is soft. 
  5. Meanwhile, cook barley according to directions and set aside. 
  6. Add barley to finished soup, and let warm for 5-20 minutes.  
  7. I cook the barley separately, so it doesn't suck up the stock. You can add to the soup pot, or crock pot, and make life a bit easier.
