Ingredients


1 can (15oz) Black beans, canned (drained)
1 can (15oz) Black-eyed peas, canned (drained)
1 can(s) (14oz) Diced tomatoes, canned (drained)
2 cup Frozen white corn kernels (thawed)
1/2 medium Yellow onion (chopped)
1/4 medium pepper(s) Green bell pepper (finely chopped)
1 medium pepper(s) Jalapeno pepper (chopped and seeded; optional)
1/2 tsp Garlic powder (or 1 clove fresh)
1 cup Italian salad dressing (vinaigrette)
3/4 cup Cilantro (coriander) (fresh; chopped)

Instructions


  1. Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeño peppers in a large bowl. Season with powdered garlic.
  2. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.
