These festive muffins with eggnog, fresh cranberries, and walnuts will make your whole house smell like Mrs. Claus’s kitchen!
Ingredients

Cranberries
(fresh, chopped)
1/2 cup
Granulated sugar
1 1/2 cup
All-purpose white flour
1 1/2 cup
Wheat flour, whole wheat
1 tbsp
Baking powder
1 tsp
Salt
1 1/2 tsp
Cinnamon
1/2 tsp
Nutmeg, ground
1/3 cup
Honey
2 tbsp (1 egg)
Egg replacer, powder, Bob's Red Mill
1 1/2 cup
Holiday Nog, Coconut
1/3 cup
Coconut oil
(melted)
1/2 cup
Walnuts
(chopped)
Instructions
Preheat the oven to 375F (190C) and line muffin pans with cupcake liners.
In a small bowl, combine chopped cranberries and sugar. Set aside.
In a large bowl add the white flour, whole wheat flour, baking powder, salt, cinnamon, nutmeg, honey, egg replacer, eggnog, melted coconut oil, and chopped walnuts. Stir just until combined (be careful not to over-stir).
Add sugared cranberries and gently fold in.
Fill the cupcake liners 3/4 of the way and then bake for 15-20 minutes or until an inserted toothpick comes out clean. Serve warm or cool! If you want them to be sweeter you can make a quick glaze with powdered sugar and milk!
