Instructions
Heat oil in a frying pan over medium-high heat. Add the onions and celery and sauté until the onions are translucent about 5-6 minutes.
Add the apple and sauté for another minute then remove from the heat to let cool slightly.
Transfer the cooked vegetables to a large bowl and mix in the ground turkey, egg, oats, feta, garlic, thyme, salt, and pepper. The mixture will be quite wet.
With your hands, form the mixture into burger patties.
Heat a large skillet over medium-high heat. Once hot, cook burgers for 5-6 minutes on each side, or until they are no longer pink in the center and cooked through (internal temperature should reach 165°F). Alternatively, you can bake them in the oven at 350°F for 30 minutes.
While the burgers are cooking, prepare the orange ginger cranberry sauce. In a medium saucepan, bring cranberries, orange juice, water, honey, orange zest, cinnamon, sea salt, and fresh ginger (if using) to a boil over high heat.
Reduce heat and simmer, stirring occasionally, until cranberries have burst and sauce is slightly thickened about 10 minutes.
Remove from heat and let cool to room temperature.
Serve your burger patties with buns of choice or use lettuce for a low carb option. Best served with a side salad or baked sweet potato fries.
Notes:
The burgers can be prepped ahead of time and frozen for quick dinners. Ensure to fully warm through the when re-heating to an internal temperature of 165°F.
