Instructions
Preheat the oven at 170 ºC (340 ºF).
Place the olive oil, honey, orange blossom water, and egg yolk into a large bowl. Beat the ingredients with a whisk. Add Greek yogurt and beat this mixture together. Put in the cinnamon, walnuts and cranberries. Give it a good mix. Add the flour and thoroughly mix all these ingredients.
In another bowl, beat the egg whites until they are fluffy.
In a small cup, combine the baking soda and lemon juice. This solution will fizz and help make the bread rise during baking. Pour the fizzy solution and the egg whites into the bread mixture. Fold the ingredients with a spoon so you won't lose any of the air. Keep cutting and folding until the egg whites are well mixed with the bread mixture.
Grease with olive oil and lightly flour the loaf pan, and place the mixture into the loaf pan. Bake for 50-55 minutes or until golden brown. Remove from oven and allow to cool for about 15 minutes before serving.
