This Creamed Spinach makes a fantastic side dish to grilled meats. For a perfect meal try grilled steaks with this creamed spinach and some mashed cauliflower.
Ingredients
1 tbsp
Butter, unsalted
1/4 small
White onion
(thinly sliced)
1 clove(s)
Garlic
300 gm
Swiss chard
(or spinach)
1/4 cup
Heavy cream, 38% M.F.
1/4 cup
Parmesan cheese, grated
2 tbsp
Cream cheese
(heaped)
1/4 tsp
Nutmeg, ground
1 pinch
Salt and pepper
(to taste)
Instructions
Heat the butter in a 10.5" cast iron skillet, once hot add in the garlic and onion. Cook 3-4 minutes until softened.
Add in the spinach and cook 3-4 minutes until it's reduced in size. Add in the heavy cream and cream cheese, cook until the spinach is very wilted then stir in the Parmesan, a pinch of nutmeg, and season with salt and pepper to taste.
