Creamy polenta made with honey, coconut, and walnuts makes for a very satisfying meal
Ingredients
1/3 cup
Polenta, dry
1/2 cup
Almond milk, unsweetened
(or other non-dairy milk)
3/4 cup
Water
2 tsp
Coconut oil
1 pinch
Sea Salt
2 tsp
Honey
2 tbsp
Coconut, shredded, unsweetened
2 tbsp
Walnuts
1/4 cup slices
Strawberries
(optional, can use more or less)
Instructions
In a small saucepan, combine polenta, milk, water, coconut oil, and salt.
If you like it creamier, substitute more milk for the water.
If you like it thicker, reduce the water to ½ cup.
Bring to a boil, then turn down and let simmer on low, stirring often to avoid clumps and preventing it from sticking to the bottom. It should take about 10 minutes.
Transfer to a bowl and add honey, coconut, and chopped walnuts or fruit.
