681 gm Beef, stewing beef (1.5 lbs. grass fed beef stew meat, cut into large bite-sized pieces)
3 tbsp Oat flour (Tbsp gluten free)
1 tbsp Oregano, ground (Tbsp dried)
1 tbsp Paprika, smoked
1 tsp Cayenne pepper
2 tbsp Extra virgin olive oil (Tbsps; or extra-virgin; divided)
2 medium potato Sweet potato (peeled and chopped into large bite-sized pieces)
1 cup Cremini (Italian) mushroom (fresh; sliced)
3 medium stalk(s) Celery (sliced)
3 large Carrots (large; organic; peeled and chopped)
4 clove(s) Garlic (sliced)
1 large Yellow onion (large yellow; chopped)
1 sprig Rosemary, fresh (fresh)
2 tbsp Balsamic vinegar (Tbsp)
1 can (14 oz) Fire Roasted Diced Tomatoes ((14.5 ounce) jar diced fire-roasted diced; with juice)
454 gm Bone Broth Protein, Ancient Nutrition, Unflavoured
1/2 tsp Salt (tsp sea)
1/2 tsp Black pepper

Instructions


  1. In a small bowl whisk flour, oregano, paprika, cayenne pepper salt, and black pepper. Dredge the beef cubes in the flour mixture.
  2. Place half the oil in a large skillet over medium heat. Place half of the beef cubes into the skillet and cook on all sides, for about 30 seconds per side, or until golden. Remove and set aside.
  3. Add the rest of the oil and repeat with the remaining beef.
  4. Add meat pieces to the slow cooker. Add in sweet potatoes, onion, celery, carrots, garlic, mushrooms and rosemary.
  5. Pour in bone broth, balsamic vinegar and diced tomatoes with juice.
  6. Season with sea salt and pepper.
  7. Cover and cook on high for 4 to 6 hours or low for 8 to 10 hours.
  8. Alternatively sauté in instapot and the cook for 25 minutes on high pressure. Can sub 1 tbsp. tomato paste for canned tomatoes. 
  9. Stir and enjoy while hot!
