4 breast Chicken breast, boneless, skinless
1 tbsp Cumin
1 tbsp Chili powder
1 tbsp Garlic powder
1 tbsp Onion powder
1 can(s) (28oz) Diced tomatoes, low sodium, canned
1 medium Yellow onion (chopped)
1 medium pepper(s) Jalapeno pepper
12 medium shell(s) Taco shell (or soft shell; lowest sodium option available)
1/2 cup shredded Cheddar cheese, reduced fat (18%) (optional)
4 tomato Plum tomatoes (seeded and diced; for salsa)
1/4 cup Red onion (diced; for salsa)
1/4 cup chopped Red bell pepper (for salsa)
1/4 cup Cilantro (coriander) (chopped; for salsa)
1 clove(s) Garlic (for salsa)

Instructions


  1. Place chicken breasts in the slow cooker.
  2. In a small bowl, mix the cumin, chili powder, garlic powder, and onion powder, then sprinkle the mixture over the chicken.
  3. Add the yellow onion, jalapeno pepper, and canned tomatoes to the slow cooker. Cover and cook on HIGH for 4 hours or LOW for 8 hours, or until meat is easily shredded with a fork.
  4. Once the chicken is cooked, preheat the oven to 350°F and arrange the taco shells in a 9x13 baking dish.
  5. While the oven is heating, use two forks to shred the chicken, then toss with the sauce.
  6. Spoon the shredded chicken mixture into the taco shells and top with cheese (optional). Bake for 10 minutes.
  7. Meanwhile, make the salsa. Combine the plum tomatoes, red onion, bell pepper, cilantro, and garlic in a bowl and set aside.
  8. Remove tacos from the oven, top with fresh salsa and a sprinkle of cilantro.
