2 cup | Lupini beans, raw (just use canned! Unico brand is good with net carbs at 1g) |
2 tbsp | Extra virgin olive oil |
1/2 tsp | Salt and pepper (or to taste- add other seasonings if you like) |
1. Preheat oven to 350.
2. Open can, dump beans into strainer and rinse. Allow to drain.
3. Put in bowl and toss with olive oil and salt and pepper.
4. Spread on parchment lined baking sheet. Roast for 25-30 minutes or until browned. IMPORTANT: Turn off the oven and leave beans in the oven for 5-10 minutes or until as crisp as you like.
5. After roasting, add other seasonings if you wish (onion or garlic powder, lemon pepper, cayenne pepper). I sometimes toss the lupini in popcorn seasoning.
NOTE: My favourite way to roast these is in my air fryer. It still takes about the same time but I think the lupini gets crispier in the air fryer!

These beans will 'pop' in the oven as they roast, Be sure the pan is large enough to contain them or make sure there's a larger pan on the bottom of your oven to catch the ones that fly off the baking sheet!
