Curry chickpeas (Jamaican Style)

This curry chickpea recipe is inspired by Jamaican curry and my love for the Indian flavors. The is a vegan-friendly, gluten-free recipe.

Ingredients


960 gm Chickpeas, canned, drained (Four cans)
1 tbsp Curry powder (tbsp)
360 gm Potato (Diced)
150 gm Carrots (Diced)
80 gm Yellow onion (Chopped)
60 gm Green onion (Chopped)
4 clove(s) Garlic (Crushed)
6 sprig Thyme, fresh
6 tbsp Salt ((I'm using pink himalayan salt))
1 cup Water (Cup)
4 clove Cloves
2 leaf Bay leaf
2 tbsp Garam masala
2 cup Brown rice, medium-grain, cooked
1 cup Coconut milk, sweetened ((Use Low Fat, Unsweetened))

Instructions


  1. In a pot on medium heat, add 4 tbs water, cloves, bay leaf, 2 chilli peppers (optional), and curry powder. Toast for a minute until the curry powder turns a red-ish brown color. 
  2. Add the onion, garlic, ginger, and scallion and sauté for 2 to 3 minutes.
  3. Stir in the potato and chickpeas making sure they are fully coated in with the curry. Cook for about 5 minutes. If you are using a pot that isn't non-stick, stir continuously to prevent burn. You may have to add a bit of water.
  4. Add tomato, carrot, coconut milk, thyme, garam masala, salt and water. Cover and cook for 30 minutes until the liquid reduces the potato and carrot soften. 
  5. Before turning off the heat, crush a few chickpeas and potatoes to thicken up the sauce.
  6. Cook Brown Rice separately.
