Ingredients


1/2 cup Mayonnaise, fat free, Kraft (or use vegan mayonnaise)
1 dash Ground red pepper, McMormick (or use the Simply Organic brand)
3/4 tsp Curry powder
1/2 cup Mango (fresh; peeled, finely chopped or frozen and thawed)
1 chicken breast (196 g) Chicken breast, boneless, skinless, grilled (chopped or shredded chicken breast)
1/2 cup chopped Red bell pepper
1/4 cup chopped Yellow onion
2 cup shredded Red leaf lettuce
2 medium tortilla(s) Tortilla, gluten-free

Instructions


  1. Stir the mayonnaise, ground red pepper, and curry powder together in a medium bowl.
  2. Add the mango, chicken, bell pepper, and onion; toss to coat.
  3. Divide chicken mixture evenly among tortillas, spreading to cover 1/2 of each.
  4. Top chicken mixture with lettuce and roll up to serve.

Notes:

Texture Modifications:

  • Puree: Omit the tortilla and lettuce. Steam the bell pepper and mango until they are soft enough to puree. Mix up the chicken salad and transfer to a food processor. or blender. Process the salad mixture until smooth. There should be no separation of liquid.
  • Minced: Omit the tortilla and lettuce. Process the chicken salad, in a food processor or blender, until the mixture is moist and the pieces are no more than 4 millimeters in size - the pieces should fit between the tines of a fork.
  • Soft and bite-sized: Press down on the mixture using the back of a fork. The mixture should remain squashed and not regain its shape. After rolling the tortilla, use a knife to cut it into pieces no bigger than the size of your thumbnail.
