This Strawberry Yogurt Parfait is quick and easy to make and can be easily prepped in to-go containers the night before to grab on busy mornings!
Ingredients
2 tbsp
Chia seeds
(soak before adding)
1/2 cup
Water
(water, for soaking chia)
440 gm
Greek yogurt, plain, fat-free
(or dairy-free or lactose-free yogurt of choice)
1 tsp
Honey, raw
(or maple syrup)
1 cup slices
Strawberries
2 tbsp
Flaxseed meal (ground)
1 cup
Granola
(of choice)
Instructions
Add chia seeds to water and stir to combine. Allow it to sit for about 20 minutes until a gelatinous mixture forms. Add more water if needed.
Mix yogurt with chia seed mixture, honey, strawberries, and flaxmeal.
Top with granola if serving immediately, or put granola in a separate container to grab with the fruit and yogurt mixture in the morning, to keep fresh and crisp.

Storage: To save time, double or triple the batch and store in airtight containers in the fridge for up to 3 days.
Optional Toppings: You can add granola, nuts, seeds, or other fruits of choice.
