Quick vegan, gluten free snacks to keep you going!
Ingredients
1 cup
Medjool date
(Pitted)
1/2 cup
Rolled oats- Gluten Free
3 tbsp
Almond butter
(or other nut butter)
1 tbsp
Flaxseeds
(or chia seeds)
1/4 cup
Cocoa powder, unsweetened
1 tbsp
Goji berry powder
2 tbsp
Dark chocolate chips, vegan
1/3 cup
Coconut, shredded, unsweetened
Instructions
1. Place pitted medjool dates into a food processor or high speed blender. Blend until dates are ground and clump into a sticky ball. 2. Add in oats, nut butter, flax or chia seeds, cocoa powder and goji berry powder. Blend until all ingredients are completely combined. Add chocolate chips and pulse to distribute. 3. Roll mixture into 1'' balls with your hands, then roll in unsweetened coconut flakes. Repeat until all the balls are rolled. You should get between 12-14 energy balls from this recipe. 4..Refrigerate for up to 5 days or freeze for longer life!
