Dark Chocolate Vegan Peanut Butter Cups

Decadent, rich, and super easy to make! These homemade Dark Chocolate Nut Butter Cups are a fun sweet treat that adults and kids love!

Ingredients


1/3 cup Coconut oil (melted)
1/3 cup Cocoa butter (melted)
1/3 cup Maple syrup (pure)
1/2 cup Cocoa powder, unsweetened
2 tbsp Cocoa powder, unsweetened
1 tsp Vanilla extract, pure
1/2 tsp Celtic sea salt
9 tsp Peanut butter, smooth (or nut butter of choice)
1/4 tsp Celtic sea salt (for topping; optional)

Instructions


  1. Prepare a mini tart or cupcake tray.
  2. In a medium-sized mixing bowl, whisk together the coconut oil, cocoa butter, maple syrup, cacao powder, vanilla, and salt in a bowl using a whisk. 
  3. Add about 2 teaspoons of the chocolate mixture to each cup. Refrigerate or freeze for 10 minutes. 
  4. Remove the tray from the fridge and add a teaspoon of nut butter to each cup.
  5. Cover the nut butter with more chocolate, sprinkle a little sea salt on top, and refrigerate or freeze for another 20 minutes before serving.

These Dark Chocolate Vegan Peanut Butter Cups are a delicious treat for kids and adults alike! For best results, use high-quality vegan dark chocolate to ensure a smooth and creamy texture. If you don’t have vegan chocolate chips, you can also use chopped-up vegan dark chocolate bars. Be sure to use creamy peanut butter for the filling, as chunky peanut butter will make the cups difficult to bite into. Lastly, let the cups cool completely before serving to ensure they hold their shape. Enjoy!
