2 tbsp Extra virgin olive oil
1 large Yellow onion (chopped)
3/4 cup chopped Celery
1 medium Carrots (diced)
2 clove(s) Garlic (minced)
1/2 cup Green/yellow string beans, raw
1 cup shredded Green cabbage
4 cup Chicken broth (stock), low sodium
1 can (15oz) Chickpeas, canned, low sodium (drained, rinsed)
1/2 cup Pasta, macaroni, elbow, dry (ditalini or small pasta of choice)
1 leaf Bay leaf (to taste)
1 tsp Thyme, dried (to taste)
1 tsp Rosemary, dried (to taste)
2 tsp Parsley, dried (to taste)

Instructions


  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the onion, celery, and carrots and sauté until softened- about 5 minutes.
  3. Add garlic, green beans, and cabbage, and continue cooking for 10 minutes.
  4. Stir in broth, chickpeas, macaroni, basil leaf, thyme, rosemary, and parsley.
  5. Bring to a boil over high heat. Reduce heat and simmer for 30 minutes until veggies reach desired doneness.
