3 medium Lemon (juiced and zested; dressing)
1/4 cup Tahini (dressing)
1 gm Island Spice: Organic Jamaican Jerk (1/2 tsp to taste (optional); dressing)
1 tbsp Water (to thin; dressing)
1 bunch Parsley, fresh (finely chopped; salad)
1 can (15oz) Chickpeas, canned, drained (salad)
2 medium Heirloom tomatoes (diced; salad)
1 cucumber(s) Cucumber (diced; salad)
8 heart Artichoke hearts, canned (diced; salad)
3/4 cup Bulgur, dry (cook according to package directions; salad)
1/2 medium Red onion (diced; salad)

Instructions


  1. For the dressing:
    1. whisk together the salad dressing ingredients and set aside.
  2. For the salad:
    1. add all ingredients to a bowl, toss to mix.
    2. add the dressing and toss again until ingredients are well coated.
    3. serve and enjoy!
