4 potato small White potato
1 1/2 l Water
1 tbsp Margarine, unsalted

Instructions


Peel the potatoes and cut into strips (1.2 cm x 1.2 cm) or dice (2 cm x 2 cm x 2 cm).

Boil in water (1.5 L) for 8 minutes, then drain.

Add clean water (1.5 L) and soak for 12 hours.

To reheat, bring the potatoes back to a boil and drain. 

Add unsalted margarine to reheated potatoes and mash, adding your favorite cow's milk alternative or water, as needed, until the desired consistency is achieved.

Notes:

  • Once potatoes have been double boiled, they can be used as required, e.g. mash, potato salad, home fries, baked, etc.
  • Adding garlic, dried herbs, and spices is a great way to boost flavor without going over renal/kidney diet parameters.
  • Once double boiled, the potatoes will drop from ~900 mg potassium to ~41 g potassium per serving.
