A fast way to cook flavorful, roasted veggies without an oven.
Ingredients
1 small
Zucchini
1 small
Yellow Summer Squash
1 large pepper(s)
Red bell pepper
(Orange or Red)
1 cup
Portobello mushroom
(chopped)
1 tbsp
Avocado oil
(or olive oil)
1 tsp
Italian herb seasoning
1 tsp
Garlic powder
1 tsp
Onion powder
1 tsp
Paprika
1 dash
Salt and pepper
(to taste)
Instructions
Preheat the air fryer to 390 F (200C)
Chop all vegetables into even size pieces. Place all of the chopped vegetables into a bowl and drizzle with oil. Add all seasonings and mix to coat evenly.
Place the veggies in a single layer in the basket, and air fry for 9-11 minutes, shaking halfway through at 4-5 minutes to get them crisp and evenly cooked on all sides.
Once the veggies are fully cooked, transfer them to a serving bowl and serve them as is or with a sprinkle of grated Parmesan cheese.
