1 fillet (170g) | Atlantic salmon,wild, boneless |
1 cup | Green/yellow string beans, raw |
1 tbsp | Basil pesto |
1 tbsp | Olive Oil, Extra Virgin |
1 lemon wedge | Lemon |
1 pinch | Himalayan sea salt |
1 dash | Black pepper |
Preheat oven to 180C.
Prepare beans—wash, chop both ends off and de-string—then place them in a square of foil.
Place salmon steak on top, then drizzle with olive oil, and top with pesto, salt, and pepper.
Close the foil tightly around the salmon, place package on a foil tray and bake for 20-30minutes, or until salmon is cooked and the beans are soft.
Serve with a lemon wedge.
This can also be made with a filet of white fish, or with asparagus instead of beans.
