Ingredients


4 cup grated Carrots
1/2 small Red onion (grated)
1/2 cup Cashew nuts, raw (chopped)
1/2 cup Cranberries, dried
1/2 cup Extra virgin olive oil
1/2 whole lemon(s) Lemon juice
1 clove(s) Garlic (crushed)
1 tsp Tahini
1 tsp Dijon mustard
1 tsp Maple syrup (or to taste)

Instructions


Mix all salad ingredients together. Set aside. Place all dressing ingredients into a bowl and whisk. Chill for 30 minutes and serve.
