50 medium slice Bacon
12 medium Yellow onion (diced)
4 1/2 bulb Garlic (minced)
12 tbsp Ghee
13 2/3 kg Potatoes (Russet; peel and chopped. Dice approx. half.)
68 cup Chicken broth (stock)
5 tbsp Salt (to taste)
3 tsp Black pepper
4 bunch Green onion (green; chopped (plus more for topping))
1 1/4 kg Cheddar cheese (grated)

Instructions


  1. Evenly distribute diced onion and garlic to heated pots with ghee. Cook until the onion becomes translucent.
  2. Add the potatoes (diced in one pot and roughly chopped in the other) chicken broth, salt, and pepper. Bring to a boil and then lower the heat. Let simmer until the potatoes are tender.
  3. Take off heat and place in hotel pans to cool. Add roughly chopped potato half of the soup to a blender and blend until mostly smooth. Pour the soup back into the pot, incorporate and warm.
  4. Place bacon on parchment covered sheets and bake at 375. Watch closely, turn and separate until just crispy. Pour bacon grease into soup, stir and continue to warm until serving.
  5. Garnish with bacon and green onions and cheddar cheese.
