36 gm Bacon, fat reduced, salt reduced (2 bacon medallions)
2 medium Egg (hardboiled; chopped)
1/2 avocado(s) Avocado (large; chopped)
1 small Red onion (tbsp; finely chopped)
1 small pepper(s) Red bell pepper (tbsp.; finely chopped)
1 pinch Salt and pepper (sea; and ground; to taste)

Instructions


  • Fry the bacon until crisp on a non-stick pan. Let it cool slightly and chop.
  • Combine the bacon, eggs, avocado, onion and bell pepper in a bowl.
  • Season with salt and pepper to serve.
