Instructions
- Preheat the oven to 400oF (200oC) and prepare a baking sheet.
- Cut spaghetti squash in half and place flesh side up on the baking sheet. Bake for 40 mins.
- Cover another baking sheet with parchment paper and set it aside.
- In a large bowl, combine ground turkey, salt, mustard powder, paprika, egg, quick oats, minced garlic, and chopped parsley and mix well by hand.
- Roll turkey mixture into evenly sized meatballs (about the size of a golf ball) and place on the baking sheet, and bake for 20 minutes.
- In the meantime, flake cooled squash with a fork to create 'noodles'.
- Heat tomato sauce in a saucepan.
- Place spaghetti squash in a bowl, top with sauce and turkey meatballs, and sprinkle with parmesan cheese.
Notes:
1 serving = 5 turkey meatballs
