Feta Broccoli and Radish Salad with Raisins

Ingredients


8 potato Fingerling potatoes (sliced)
1/2 tbsp Extra virgin olive oil
1 dash Salt
1 stalk (100gm) Broccoli, stalk (whole)
1/2 cup Radish sprouts
3 tbsp Pine nuts, dried
1/2 tbsp Extra virgin olive oil
1 dash Salt
80 gm Goat feta cheese
2 tbsp Golden raisin, seedless
2 tbsp Ranch salad dressing

Instructions


  1. Preheat the oven to 425° F and prepare 2 baking sheets with parchment paper.
  2. Add the potatoes to a bowl with olive oil and salt and stir to coat.
  3. Spread the potatoes evenly over the parchment paper.
  4. In the same bowl used for the potatoes, combine the broccoli, radish, pine nuts, olive oil, and salt until coated. 
  5. Spread the vegetable mixture in an even layer on the second baking sheet
  6. Roast both the potatoes and the vegetable mixture for 15 minutes, until broccoli and pine nuts begin to brown. 
  7. Remove the cooked potatoes and vegetable mixture from the oven and pour into a large bowl. Let cool for 10 minutes. 
  8. Once cooled, add the cheese, raisins, and ranch dressing and toss to combine.
  9. Serve immediately or cover and cool for up to 2 days.
