1 can, drained Salmon, pink, canned
2 tbsp Lemon juice (fresh)
1/2 cup diced Pineapple (canned, fresh, or frozen and thawed)
1/4 cup Red onion (finely diced)
1/2 medium pepper(s) Jalapeno pepper (deseeded and chopped)
1/2 medium pepper(s) Red bell pepper (diced)
1/2 whole lime(s) Lime juice (fresh)
4 tbsp Guacamole (store-bought)
6 small tortilla(s) Tortilla, corn
1 cup Baby spinach

Instructions


  1. Place the canned salmon in a bowl and toss with lemon juice.
  2. Prepare the salsa. In a large mixing bowl, combine the pineapple, red onion, jalapeno, red bell pepper, and lime juice.
  3. To assemble, line the tortillas with spinach then top with salsa, salmon, and guacamole.
