Preheat oven to 450F and line a large baking sheet with parchment paper.
Separate the egg yolks from the white, placing the egg whites in a large bowl and the yolks still in half of the shell to keep their shape in a small bowl.
Lightly season the egg whites with salt, pepper, nutritional yeast.
Using a whisk or hand mixer, beat the egg whites to the stiff peak stage.
Gently fold in ham, chives, bell pepper or whatever combination of extras you prefer.
Spoon 4 mounds of egg whites onto a parchment-lined sheet tray into cloud-like mounds that each have an indentation in the middle (looks like nests).
Bake until slightly golden. About 3 minutes.
Carefully place the whole yolks into the indents of each white cloud. Season with yolk with salt and pepper. Bake until the yolks are just set, about 3-4 minutes.
