1 2/3 cup | Pancake mix, dry (I used Annie's mix) |
1 cup | Oat Milk (Use any plant milk) |
2 tbsp | Flaxseed meal (ground) |
1/2 cup | Maple syrup (More if needed) |
2 tbsp | Butter, vegan (More if needed) |
1 cup | Blueberries |
1 cup | Raspberries |
1. Follow package directions for measurements.
2. Start by mixing 2 tbsp of ground flax with 6 tbsp of water. Let sit for 5 minutes.
3. Then add the dry mix to a large bowl with the plant milk.
4. Add the flax "egg" to the mixture as well and stir to combine.
5. If the batter is too thick add a little bit more milk.
6. Heat up a pan on medium heat.
7. Use a 1/3 measuring cup to scoop the batter onto the pan.
8. Once the pancake starts to bubble, flip the pancake over and cook for another minute until golden brown.
9. Top with butter, warm maple syrup, blueberries, raspberries and any other toppings you love.
