Ground Beef Stir-Fry With Curried Cabbage and Rice

1 1/2 cup Brown rice, medium-grain, dry
1 tbsp Olive Oil, Extra Virgin
1 small Yellow onion (diced)
454 gm Beef, ground, extra lean
1 tbsp Curry powder
1/4 tsp Black pepper
454 gm Green cabbage (thinly sliced)
1/2 cup Frozen green peas
2 tbsp Lime juice (fresh)
1/4 cup Cilantro (coriander) (minced)
2 stalk(s) Green onion (thinly sliced)

Instructions


  1. Prepare rice as per package instructions.
  2. Heat oil in a large pan over medium heat. 
  3. Add the onions and cook, stirring frequently, until they are soft and translucent.
  4. Add the ground beef to the pan. Use a spatula to break it into pieces. Cook, stirring frequently, until the ground beef is cooked and no longer pink.
  5. Mix in the curry powder and black pepper. 
  6. Add the cabbage and peas. Cover the pan and cook for 2-5 minutes until the cabbage softens and the peas are thawed.
  7. Squeeze in the lime juice and stir. 
  8. Serve over rice and top with cilantro and green onions.

  • To make Paleo, Keto, Low Carb, and Whole30-friendly, omit the rice.
  • To make vegan-friendly sub the ground beef for firm tofu or chickpeas.
  • Ground beef can also be swapped for lean ground pork, turkey, chicken, or salmon.
