4 medium potato | Sweet potato (peeled, cubed) |
1 tbsp | Coconut oil (organic) |
3 clove(s) | Garlic (crushed) |
1/2 cup | Almond milk, unsweetened (organic) |
1 dash | Salt and pepper (to taste) |
1. In a large pot boil sweet potatoes in salted water until tender, and drain in a colander.
2. Meanwhile, melt coconut oil and sauté garlic until lightly golden.
3. Return potatoes to the pan, and add milk: mash until smooth and creamy. Adjust salt and pepper to taste.
