4 medium potato Sweet potato (peeled, cubed)
1 tbsp Coconut oil (organic)
3 clove(s) Garlic (crushed)
1/2 cup Almond milk, unsweetened (organic)
1 dash Salt and pepper (to taste)

Instructions


1. In a large pot boil sweet potatoes in salted water until tender, and drain in a colander.

2. Meanwhile, melt coconut oil and sauté garlic until lightly golden.

3. Return potatoes to the pan, and add milk: mash until smooth and creamy. Adjust salt and pepper to taste.

Serve and enjoy!
