Ingredients


4 large Zucchini (cut into 3-in length)
1 large White onion (chopped)
4 clove(s) Garlic (crushed)
3 tbsp Extra virgin olive oil
2 tbsp Mint, fresh (chopped)
1 pinch Sea Salt (to taste)
1 dash Black pepper (freshly ground, to taste)

Instructions


  • Steam zucchini until soft, drain water and mash with a masher.
  • In a heavy bottomed pan sauteé onions until translucent then add garlic and cook for a minute or two.
  • Add mashed zucchini and mint, and season to taste.
  • Cook for 5 minutes and spoon into bowls.
