Ingredients


1 bunch Curly kale (about 10 ounces or 3-4 cups; (finely chopped))
1 pint Tomatoes (cherry or grape; (halved))
1 Cucumber (seeded and diced)
1/2 Red onion (thinly sliced)
1/2 cup Feta cheese (crumbled)
1/4 cup Extra virgin olive oil (extra virgin)
2 Lemon juice (Tbsp)
1 clove(s) Garlic (minced)
1 tsp Oregano, dried
Salt and pepper (to taste)

Instructions


  1. To make the dressing:

    1. In a small to medium mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Whisk until combined.
  2. To make the salad:

    1. Combine all the chopped ingredients in a large bowl, pour dressing over salad and mix. Sprinkle with extra feta cheese before serving.
    2. Prepared and dressed salad can be stored in the fridge for up to 48 hours.
