Ingredients


1/4 cup Extra virgin olive oil (for dressing)
1/4 cup Red wine vinegar (for dressing)
1/2 tsp Dijon mustard (for dressing)
2 clove(s) Garlic (for dressing)
1 tsp Oregano, dried (for dressing)
1 cucumber(s) Cucumber (English; chopped)
1 medium pepper(s) Red bell pepper (chopped)
1 medium pepper(s) Green bell pepper (chopped)
2 cup Grape tomatoes (halved)
1/2 small Red onion (finely sliced and halved)
4 cup Lettuce, spring mix (mesclun)
4 slices Halloumi
3/4 cup Kalamata olives (pitted)

Instructions


  1. Prepare the vinaigrette. Combine oil, vinegar, dijon, garlic, and oregano in a mason jar and shake vigorously. 
  2. Place all veggies, pitted olives, and feta in a large salad bowl and toss to combine.
  3. Add dressing and lightly toss just before serving.
