These fully loaded pita pockets are filling, quick to prepare and features some of the best ingredients from the Mediterranean diet.

Egg

2 large egg

Dill, fresh

1 large pita
Pita bread, whole-wheat
(halved)
2 tbsp
Tzatziki sauce
1 cup
Lettuce, romaine
(chopped)
6 tomato
Cherry Tomatoes
(halved)
1/2 cucumber(s)
Cucumber
(sliced)
1/2 small
Red onion
(sliced)
1/4 cup, crumbled
Feta cheese, low fat
Instructions
Whisk the eggs together in a microwave-safe bowl. Microwave on HIGH for 2-3 minutes, remove and stir. Cook in the microwave for another 30-60 seconds or until completely set. Stir in the fresh dill and set aside.
Cut the pita in half and open the pockets. Spread the tzatziki sauce inside each pocket evenly.
Divide the romaine lettuce, cherry tomatoes, and cucumber slices evenly between the two pita pockets, then do the same for the egg mixture.
Top the full pita pockets with crumbled feta cheese and enjoy!
