1 cup | Mung beans, boiled, canned (drained and rinsed) |
454 gm | Beef, ground |
1 tomato | Roma tomatoes (diced) |
1 tbsp | Chili powder |
2 tsp | Cumin |
2 tsp | Garlic powder |
1 tsp | Onion powder |
1 tsp | Himalayan sea salt |
Heat a large pan with an oil of your choice over medium-high heat
Add ground beef and cook until nearly cooked throughout. Add the diced tomatoes and mung beans and continue to cook.
Sautee, stirring occasionally, for about 5 minutes.
Add in the chili power, cumin, garlic powder, onion powder and salt and saute for another 5 minutes.
Serve on a taco, burrito, bowl of rice or on its own!

Buying dry mung beans and soaking is a better option than using canned. If you soak a little too much, then try sprouting the extra and throw it into salads! In fact you could sprout everything and use them in this recipe. It's also important to source local organic grass fed/finished beef. Make sure the fat you are eating in this meal is of the highest quality.
