Ingredients


454 gm Ground turkey, lean (extra lean ground)
1 tsp Cumin (ground; (divided))
1 tsp Oregano, dried (dried; (divided))
1/2 tsp Salt (kosher; (divided))
1/4 tsp Black pepper (ground)
3 tsp Olive Oil, Extra Virgin ((divided))
1/2 medium Yellow onion (yellow; (chopped)
1 medium pepper(s) Red bell pepper ((diced)
3 clove(s) Garlic (minced)
2 1/2 cup Enchilada verde sauce, canned (I love siete enchilada sauce)
3/4 cup Salsa, ready-to-serve
1 can (4oz) Green chili peppers, canned ((4 oz.) can diced green chiles)
1 can (15oz) Black beans, canned ((14 oz.) can; (drained & rinsed))
3/4 cup Frozen yellow corn kernels (fresh or frozen)
1 cup Quinoa, cooked (cooked)
3/4 cup Mexican cheese blend (shredded)
3 tbsp cilantro (minced)

Instructions


  1. Cook ground turkey in a nonstick skillet with cumin, oregano, salt, and pepper. Set aside.
  2. Cook onion until tender in the same skillet, then add red bell pepper, garlic, and remaining spices.
  3. Add enchilada sauce, salsa, green chiles, black beans, corn, rice, and cooked turkey to the skillet. Bring to a boil, then simmer for 10 minutes.
  4. Add corn tortillas and sprinkle cheese on top. Cover until cheese melts.
  5. Garnish with cilantro and serve with avocado sour cream and toppings of choice. I like to add lettuce on the bottom and make a bow.
