Instructions
- Cook ground turkey in a nonstick skillet with cumin, oregano, salt, and pepper. Set aside.
- Cook onion until tender in the same skillet, then add red bell pepper, garlic, and remaining spices.
- Add enchilada sauce, salsa, green chiles, black beans, corn, rice, and cooked turkey to the skillet. Bring to a boil, then simmer for 10 minutes.
- Add corn tortillas and sprinkle cheese on top. Cover until cheese melts.
- Garnish with cilantro and serve with avocado sour cream and toppings of choice. I like to add lettuce on the bottom and make a bow.
