A nutritious, gut-healing broth as a vegan alternative to bone broth.
Ingredients

Water, filtered
|
1 tbsp

Coconut oil
(organic)

1 large

Red onion
(quartered (with skins))

1 bulb

Garlic
(smashed)
|
1 pepper(s)
|
Red chili pepper (also chile or chilli)
(roughly chopped (with seeds) - avoid if you have a very sensitive stomach)

1 knob, small
|
Ginger
(thumb-sized; of; roughly chopped (with skin))

1 cup
|
Frozen spinach
|
4 cup
|
Mixed root vegetables
(mixed chopped vegetables and peelings; I used; peelings; red cabbage; fresh)

Shiitake mushroom, dried

Instructions
- Simply add everything to a large pot. Bring to a boil then simmer, with the lid on, for about an hour.
- Once everything has been cooked down, strain the liquid into a large bowl.
- Serve immediately with some additional fresh herbs, for decoration or cool for later. It also freezes well.
Notes:
*Coconut aminos can be very salty, depending on what brand you use so taste before adding any additional salt.
