Eggs are a great source of protein and contain some important B vitamins! Packed with vitamin C, tomatoes boosts immunity and acts as an antioxidant.
Ingredients
2 large egg
Egg, hard boiled
8 tomato
Cherry Tomatoes
1 pinch
Sea Salt
(to taste)
1 dash
Black pepper
(to taste)
1 tbsp
Parsley, Italian, fresh
(roughly chopped)
Instructions
Place eggs in a pot of cold water 1 inch covered on top. Bring water to a rolling boil and then turn off heat and cover eggs and allow to cook in hot water for 10-12 minutes. Remove from heat and rinse in cold water then peel the shells.
Slice tomatoes and boiled eggs and plate.
Season with sea salt and black pepper to taste! Garnish with fresh Italian parsley.
