Healthy Chicken Nuggets
Health Highlights
Healthy Baked Chicken Nuggets are made with chunks of boneless chicken breasts coated in cornflakes, and spices and then baked until golden brown.

Ingredients


681 gm Chicken breast, boneless, skinless (cut into 1.5 by 1-inch nuggets)
171 gm Greek yogurt, plain, 1% M.F.
1 cup All-purpose white flour
1 large Egg (whisked)
1 cup Corn flakes, Kellogg's (whole wheat or no salt added corn chips)
1/2 cup Lemon juice
1/4 tsp Dill, dried
1/4 tsp Celery seed (dried)
1/4 tsp Garlic powder (salt-free)
1/4 tsp Lemon peel (zest)
1/4 tsp Black pepper (freshly ground)
1 spray (about 1/3 second) Olive oil cooking spray

Instructions


  1. In a plastic container, mix the chicken with yogurt and lemon. Use your hands to rub all the ingredients together so that the chicken is completely covered in the yogurt, and lemon marinade. Then cover the container and place it in the fridge overnight, or a minimum of four hours.
  2. When you're ready to get baking, preheat the oven to 400 degrees F.
  3. Take the chicken out of the fridge and let it come to room temperature. While it warms up, prepare your breading station. In three separate bowls place the following --
    1. Bowl 1: flour
    2. Bowl 2: whisked egg
    3. Bowl 3: crushed cornflake breadcrumbs mixed with spices (dill to black pepper).
  4. Place an oven-safe cooling rack on a baking sheet, or if you don't have one, just cover a baking sheet with parchment paper. Then, start breading your chicken by dipping each strip or nugget into the flour, then dredging it in the egg, and finally rolling it in the cornflake crumbs. Place the nugget on the cooling rack and continue with the others until all are breaded. Give all the nuggets a quick spray of olive oil and place it into the oven until brown and crispy, 15 to 20 minutes. Serve warm.




Notes:

 Enjoy your delicious and healthy chicken nuggets! These can be stored in the fridge for up to three days, but for the best taste and texture, serve them fresh out of the oven. If you have any extra nuggets, store them in a sealed container in the freezer for up to two months. Reheat in the oven for a few minutes to make them as good as new!
